Menu Plan Monday - Week of February 24, 2019

We are sitting under a record snowfall here - we broke the snowfall record for the month of February last week. We live in Minnesota, so we love snow, though our son (and the rest of us) were wishing it would have spaced itself out a bit. Our son loves to shovel snow and has done a lot of it these past few weeks. This week should give us a bit of break, thankfully.
If you look close in the photo above, you can see the edge of the ice dam our neighbors have on their roof under the snow. I am very grateful for our attic insulation and no ice dams on our roof! All 5 immediate neighbors have at least 2 large ones! If not cleared, ice dams can cause damage both outside and inside the house.
We have spent the last few weeks filling our freezer with bargain meat while grocery shopping. Sunday this week I cooked a ham in the crock pot while we were at church and we enjoyed it for supper. I froze quite a bit leftover ham for use on pizza, in scalloped potatoes and other dishes at a later time, as well as leaving some in the fridge for sandwiches this week. We will buy some seafood on sale when Lent starts but, we are quite good for meat for a long while now.
I decided to change our Sunday lunch for now. Typically we have coffee/water/milk and some type of treats (anything from crackers and cheese to donuts to cake) after Worship at church, along with adult and child Sunday School classes and fellowship time. The children and I arrive home approximately 1pm and John is typically home closer to 5pm (he often visits shut-ins or has Worship at the local Senior's residence in the afternoon). We are not necessarily hungry for a full meal when we arrive home, so we are going to have some things for a "Snacky" type lunch instead - cut veggies, fruit, crackers, cheese, etc. I am hoping this will work much better than planning a full lunch as I have been in the past. I was finding that by the time we made a meal and cleaned up it was time to start our evening meal and I (and any helpers) had no rest. This should give us a restful Sunday afternoon instead.

Dinner: Corn Chowder, Crackers, Spinach Salad
Tuesday, February 26:
Breakfast: Oatmeal with Dates and Walnuts
Lunch: Leftover Chowder
Snack: Cut Veggies
Dinner: Pasta with Tomato Sauce, Spinach Salad, Garlic Bread
Wednesday, February 27:
Breakfast: Oatmeal Muffins, Scrambled Eggs, Orange Wedges
Lunch: Leftover Pasta and Sauce
Snack: Yogurt
Dinner: Rice Bowl with Egg, Spinach and Peppers
Thursday, February 28:
Breakfast: Waffles (from the Freezer), Blueberries and Walnuts
Lunch: Leftover Pasta or Chowder
Snack: Cut Veggies
Dinner: Chicken Wild Rice Soup (made with leftover Turkey), Biscuits, Carrot and Celery Sticks
Friday, March 1:
Breakfast: Scrambled Eggs, Toast
Lunch: Leftover Soup
Snack: Yogurt
Dinner: Homemade Pizza and Breadsticks
Saturday, March 2, My Dad's 87th Birthday:
Brunch: Egg Bake with Bacon and Potatoes
Snack: Popcorn
Dinner: Scalloped Potatoes with Ham, Spinach Salad
Dessert: Birthday Cupcakes
