Menu Plan Monday - Week of February 10, 2019

We were able to visit with my cousin and her family this weekend. Their son is the same age as our children and the three of them get along super well. They are all growing into fine young people and it was such a pleasure to spend time together. I am grateful!
We are also expecting more snow this week (sigh) but temperatures are at least warmer. The curse of air temperature between 0 and 32F (-17.7 and 0C) is that we typically end up with more snow. I am okay with that as the snow does a good job of supplying water for the ground (and thus summer crops!) and insulates the perennial plants. Winter does seem terribly long this year but I was reminded that I often feel that way in February. We typically start to feel like spring in April and I am looking forward to that for sure!
Two family members are arriving Thursday into Friday on there way through town to another destination. We will enjoy a special meal for Valentine's Day (Thursday) and a short visit as well. A lot of family these last few weeks. I love it!

Lunch: Cinnamon Biscuits, Scrambled Eggs, and Bacon
Snack: Girl Scout Cookies (we bought a couple of boxes from a Scout at church today)
Dinner: Taco Soup, Tortilla Chips
Monday, February 11:
Breakfast: Eggs, Toast
Lunch: Leftover Soup and Chips
Snack: No Bake Energy Bites
Dinner: Danish Sausage, Swedish Pancakes, Oranges (this didn't get eaten the last time it was on the menu)
Tuesday, February 12:
Breakfast: Oatmeal with Chi Spices and Walnuts
Lunch: Salad with Tuna and Oranges
Snack: Yogurt
Dinner: Grilled Cheese Sandwiches, Cucumber and Pepper Slices, Oranges
Wednesday, February 13:
Breakfast: Lemon Scones, Mango-Banana Smoothie
Lunch: Salad with Tuna and Cranberries
Snack: No Bake Energy Bites
Dinner: Rice Bowl with Eggs, Avocado and Spinach
Thursday, February 14, St. Valentine's Day
Breakfast: Pancakes with Walnuts, Strawberries, and Blueberries
Lunch: Salad with Walnuts, Cranberries and Oranges
Snack: Yogurt
Dinner: Salmon, Green Beans, Couscous, Blueberry-Strawberry-Mango Salad
Dessert: Angel Food Cake with Whipped Cream and Strawberries
Friday, February 15:
Breakfast: Eggs and Toast
Lunch: Salad with Leftover Salmon
Snack: No Bake Energy Bites
Dinner: Homemade Pizza
