Menu Plan "Monday" - Week of June 28, 2020

How is it becoming July already this week? Wow! I feel like time has it's own pace these days - "Is it really only Tuesday?" "Oh, wait it's already Friday!" Seriously, All of a sudden, July is arriving! I thought it was still March.... okay, maybe not March, but April....or something.
It is Independence Day this weekend in the U.S. - "July 4th!", as it is sometimes called. We will have a quiet weekend at home. Neighbors have started setting off some (illegal) fireworks already and we have been treated to several impromptu shows. A nearby park had a show last Friday and we enjoyed that from our back yard as well. The warm weather has arrived just in time and the squash are setting blossoms, the tomatoes, beans and cucumbers are setting fruit. We harvested lettuce and blueberries this past week. I am thinking we may have cucumbers by the end of this week. We will see!

Monday, June 29, My Parent's 63rd Wedding Anniversary:

Lunch: Salad with chicken, cubed apples and Craisins.
Snack: Yogurt
Dinner: Roasted Veggie Couscous, Tortilla Chips
Tuesday, June 30:
Breakfast: Blueberry-Banana Smoothies
Lunch: Leftover Couscous
Snack: No Bake Energy Bites
Dinner: Roasted Chicken with Broccoli and Cauliflower
Wednesday, July 1:
Breakfast: Overnight Maple Walnut Oatmeal
Lunch: Leftover Couscous
Snack: Yogurt
Dinner: Hamburger Gravy, Potatoes, Salad with Cucumber and Tomatoes
Thursday, July 2:
Breakfast: Overnight Maple Walnut Oatmeal
Lunch: Leftover Hamburger Gravy and Potatoes
Snack: No Bake Energy Bites
Dinner: Zucchini-Potato Pancakes with Roasted Carrots, Onions and Cabbage
Friday, July 3:
Breakfast: Bagels with Cream Cheese
Lunch: Leftover Zucchini-Potato Pancakes
Snack: No Bake Energy Bites
Dinner: Homemade Pizza
Saturday, July 4, Independence Day:
Brunch: Buttermilk Coffee Cake, Red-White-and-Blue Fruit Salad
Dinner: Grill Out with Hamburgers on Buns with Lettuce, Tomato and Pickles, Corn on the Cob, Pasta Salad
Snack/Dessert: Homemade Ice Cream, Sugar Cookies
