Menu Plan Monday - Week of April 28, 2019

Baklava!  I made baklava this last week for a school event. YUM!

I did some baking trying two new recipes this past week -  all from items we had in our house.  I had purchased phyllo dough several months ago for something different that never was made.  I used it to make baklava. I also made English toffee for an event at my children's school this past week. Both turned out very well - yum!  Baklava was not a low-cost recipe, so I will probably not make it often but it was a fun treat and I now know how to make it relatively well.  The English toffee turned out very good and was inexpensive to make, so we will make that more often.

We did not spend much this week and are eating mostly from the freezers and pantry. I will be inventorying the freezers and the pantry this week to put together a menu for May as much as possible.

    Breakfast: Yogurt and Toast
    Lunch: Pancakes Breakfast at School
    Snack: Popcorn
    Dinner: Meatball Soup, Cornbread

Monday, April 29, 2019:
    Breakfast: Eggs and Toast
    Lunch: Leftover Soup
    Snack: Yogurt
    Dinner: Southwest Chicken Casserole, Strawberry-Apple-Blackberry Salad

Tuesday, April 30, 2019:
     Breakfast: Oatmeal with Blackberries and Walnuts
     Lunch: Leftover Casserole
     Snack: Yogurt
     Dinner: Chicken Noodle Soup, French Bread

Wednesday, May 1, 2019:
    Breakfast: Oatmeal Muffins, Strawberries
    Lunch: Leftover Soup
    Snack: Grapefruit
    Dinner: Rice Bowl with Egg and Spinach

Thursday, May 2, 2019:
    Breakfast: Waffles from the Freezer, Blackberries and Walnuts
    Lunch: Spinach Salad with Hard Boiled Egg, Strawberries and Cheddar Cheese
    Snack: Grapefruit
    Dinner: Sausage and Peppers with Roasted Potatoes

Friday, May 3, 2019:
    Breakfast: Eggs and Toast
    Lunch: Leftover Sausage, Peppers and Potatoes
    Snack: Carrots and Celery
    Dinner: Homemade Pizza and Breadsticks

Saturday, May 4, 2019:
    Brunch: Egg Bake, Bacon, Strawberries and Blackberries
    Snack: Homemade Soft Pretzels
    Dinner: Vegetable Pot Pies, Sliced Apples
