Menu Plan Monday - Week of April 18th

We're heading full into spring here and I'm getting antsy so get some fresh veggies from the garden into the menu. Unfortunately, since we live in Minnesota, that will have to wait at least a few more weeks. We did get our seeds started, so it's only a matter of time! In the meantime, we get to enjoy a slightly wider variety of fruit than we have for a while. Strawberries in particular are a favorite around here and they're getting to be inexpensive, or at least relatively so. I love having my kids' eyes light up when they see the strawberries on the table!

So what's for dinner this week (and you can bet it includes at least a few strawberries!)?

Sunday, April 18:
Breakfast: Cold Cereal
Lunch: Waffles with Raspberry Sauce and Walnuts
Dinner: Fundraiser at Church

Monday, April 19:
Breakfast: Oatmeal
Dinner: Pork Stir Fry, Rice, Orange and Grapefruit Wedges
Desert for Guests: Strawberry-Yogurt Parfaits

Tuesday, April 20:
Breakfast: Oatmeal Muffins and Applesauce
Dinner: Spaghetti, Bread sticks, Spinach Salad, Apple-Strawberry-Pineapple Salad

Wednesday, April 21:
Breakfast: Oatmeal
Dinner: Pasta Salad with Chicken, Spinach Salad, Apple-Strawberry-Pineapple Salad

April 22, Thursday:
Breakfast: Pumpkin Bread or Muffins, Oranges
Dinner: Baked Chicken, Roasted Potatoes, Carrots, Citrus Salad

Friday, April 23:
Breakfast: Oatmeal
Dinner: Pot Roast with Carrots and Potatoes, Apple Slices

Saturday, April 24:
Breakfast: Bible Study Special Breakfast
Lunch: Tuna Wrap Sandwiches, Carrot Sticks, Apple Slices
Dinner: Homemade Pizza and Bread sticks, Strawberry Shortcake
