Menu Plan Monday - Week of May 24, 2020

Empanada Filling! YUMMY!

We started our week this week by making baked Empanadas.  Our daughter had an "extra credit" assignment from her Spanish teacher that involved making one of a list of possible recipes.  We chose these because we had all the ingredients on hand.  They were delicious!  We will definitely be making them again.

Sunday, May 24, 2020:
    Brunch: Cinnamon Rolls and Fruit
    Snack: Fruit and Pretzels
    Dinner: Empanadas, Cantaloupe

Monday, May 25, 2020, Memorial Day:
    Brunch:  Buttermilk Coffee Cake, Fruit
    Cookout:  Hot dogs and Bratwurst served in Buns with pickle relish, tomato ketchup and mustard, corn on the cob, and fruit
     Dessert:  Rhubarb-Blueberry Bars, Vanilla Ice Cream

Tuesday, May 26, 2020:
    Breakfast: Eggs and Toast
    Lunch: Spinach Salad with Walnuts, Berries and Cheese
    Snack:  Rhubarb-Blueberry Bars
    Dinner: Sheet Pan Nachos, Cantaloupe

Wednesday, May 27, 2020:
    Breakfast: Bagels and Cream Cheese
    Lunch: Spinach Salad with Walnuts and Apple, Crackers and Cheese
    Snack: Rhubarb-Blueberry Bars
    Dinner: Pulled Pork Sandwiches, Cut Veggies, Potato Chips

Thursday, May 28, 2020:
    Breakfast: Bagels and Cream Cheese
    Lunch: Leftover Pork Sandwiches, Cut Veggies
    Snack: Crackers and Cheese
    Dinner: Stuffed Acorn Squash, Fruit

Friday, May 29, 2020, End of Term for the Children:
    Breakfast: Oatmeal Muffins, Bananas
    Lunch: Spinach Salad with Walnuts and Apple
    Snack: Crackers and Cheese
    Dinner: Take-Away
    Dessert:  Take-Away Soft Serve Ice Cream (with a gift card) - our end of school year tradition

Saturday, May 30, 2020:
    Brunch: Egg Bake with Potatoes, Spinach and Mushrooms
    Snack: Popcorn
    Dinner: Homemade Pizza
