Menu Plan Monday - Week of January 14, 209

My husband's 45th Birthday cake - a friend made us this beautiful cake!  It was delicious!
Halfway through the month already and we are busy this week!  Basketball tournaments at school and back to work for me.  John has confirmation programming starting back up and we are gearing up for dance competition season and a few family events.  It seems like 2019 has started with a bang this year! 

I went to the grocery store between things on Saturday and bought $41 worth of groceries - a gallon of milk, bananas, frozen berries, a jar of peanut butter and veggies.  That was it.  I had hoped to spend a bit less but we were out of carrots, spinach and onions, all of which we eat regularly, and I purchased one pound of wild rice from the bulk food section, which is the cheapest way to purchase it, but that is a fairly high cost item.  I also skipped purchasing a couple of items because I simply did not want to spend that much on that item. It seems as if prices went up on several things -  hopefully the price will come down soon. We have plenty of meat in the freezer, as well as other items, and I am grateful we did not need to purchase much. 

Weeks like this mean we need a menu that is quick and easy - meals that may be made quickly or can be made in the Crock Pot (slow cooker) so they are ready when we need to eat.  The only meal that will require more than about 30 minutes to make and is not cooked in the Crock Pot is the pizza.  I will make the dough in the morning and put it in the fridge so we can just assemble it when we arrive home and then bake. My Crock Pot is getting a workout in with 3 meals this week! That will give us plenty of leftovers for lunches too - yum!

    Breakfast: Toast with Peanut Butter or Oatmeal with Peanut Butter and Cinnamon
    Lunch: Rice Pudding with Raisins and Cinnamon, Oranges
    Snack: Popcorn
    Dinner: Beef Roast and Potatoes in the Crock Pot, Corn

Monday, January 14, 2019:
    Breakfast: Cranberry Muffins, Oranges
    Lunch: Leftover Roast and Potatoes
    Snack: Homemade Trail Mix
    Dinner: Chicken Wild Rice Soup in the Crock Pot, Cornbread

Tuesday, January 15, 2019:
    Breakfast: Oatmeal with Pecans and Craisins
    Lunch: Leftover Soup
    Snack: Homemade Trail Mix or Oranges
    Dinner:  Sweet Potato Pancakes with Pecans, Breakfast Sausage

Wednesday, January 16, 2019:
    Breakfast: Oatmeal Muffins, Banana-Berry Smoothies
    Lunch: Leftover Soup
    Snack: Oranges or Bananas
    Dinner: Beef Stir Fry with Noodles

Thursday, January 17, 2019:
    Breakfast: Oatmeal with Pecans and Chai Spice
    Lunch: Leftover Stir Fry
    Snack: Homemade Trail Mix
    Dinner: Pulled Pork Sandwiches in the Crock Pot, Cut Veggies, Oranges

Friday, January 18, 2019:
     Breakfast: Maple Oat Scones, Banana-Peanut Butter Smoothies
     Lunch: Pulled Pork Sandwiches, Cut Veggies, Oranges
     Snack: Yogurt
     Dinner: Homemade Pizza and Breadsticks

Saturday, January 19, 2019:
    Breakfast: Breakfast Tacos
    Lunch and Snack: At a Basketball Tournament (we are not allowed to bring food in)
    Dinner: Roasted Veggie Couscous, Tortilla Chips
