Menu Plan Monday - Week of April 29, 2018

Four loaves of homemade bread - on my agenda to make this week!

We're expecting company for a month starting this week!  I'm super excited but it always means spending more on groceries and doing a bit more in the kitchen than I typically have time for this time of year.  Thankfully our company is more than willing to help out and it makes things so much easier. 

We have a dance competition this coming Saturday and will eat both breakfast and dinner at home but will have to buy lunch there.  They do not allow people to bring food into the venue so we will purchase something little and filling and then will make soft pretzels when we get home.  Friday evening we're meeting some extended family for dinner at a restaurant mid-way between our homes - I'm pretty excited since it has been quite a long time since we have seen them. My Dad, who is now officially the oldest living member of the family, will be treating - his request.

We're still eating some things out of the pantry and freezers but we did buy two beef roasts on sale this week - one for now, one for later (there was a limit of 2) and a few other 'stock up' type deals to fill in some holes in our pantry.  Here's what we're eating this week for 4 adults and 2 teens:

Sunday, April 29, 2018:
     Breakfast: Banana-Peach Smoothies
     Lunch: Pancake Lunch at Church
     Snack: Popcorn
     Dinner: Roasted Chicken, Rice, Steamed Carrots, Pineapple-Grape-Mango Salad

Monday, April 30, 2018:
     Breakfast: Eggs, Toast
     Lunch: Leftover Chicken and Rice
     Snack: No Bake Energy Bites
     Dinner: Individual Chicken Pot Pies, Sliced Apples

Tuesday, May 1, 2018:
      Breakfast: Oatmeal with Walnuts and Dates
      Lunch: Leftover Chicken and Rice
      Snack: No Bake Energy Bites
      Dinner: Sheet-Pan Dinner: Sausage, Parsnips, Green Beans

Wednesday, May 2, 2018:
     Breakfast: Lemon Scones, Mango-Banana Smoothies
     Lunch: Leftover Chicken and Rice
     Snack: Leftover Scones
     Dinner: Minestrone Soup, Homemade Bread

Thursday, May 3, 2018:
      Breakfast: Pancakes, Pineapple
      Lunch: Leftover Soup
      Snack: No Bake Energy Bites
      Dinner: Hamburger Gravy, Rice, Pineapple-Apple-Grape Salad

Friday, May 4, 2018:
      Breakfast: Toast with Peanut Butter
      Lunch: Leftover Gravy and Rice
      Snack: No Bake Energy Bites
      Dinner: Out with Extended Family

Saturday, May 5, 2018:
      Breakfast: Peach-Banana Smoothies, Oatmeal Muffins
      Lunch: At a Dance Competition
      Snack: Soft Pretzels
      Dinner: Beef Roast, Potatoes, Carrots,  Sliced Apples and Mango
