Menu Plan, um, Tuesday - Week of May 18th, 2014

Oh my - what a week or two.  Everything has been SO busy here and I'm grateful for so many things that have happened lately - but that's another post!

We're still not shopping much - Mom and Dad have been treating us to a few things and the rest has been from the freezer and pantry.  We did buy milk and fruit last week - I had signed up to take a fruit salad for the teacher's thank you lunch at the children's school on Friday last week.  We got to eat the extra!  Mom and Dad went to a pot luck dinner with their friends on Sunday afternoon and came home with bread and fruit and they also bought 2 containers of frosting for my daughter's birthday cake on Sunday (Mom was making it and she didn't feel like making homemade).

So here's what we're eating this week:

Sunday, May 18th:
    Breakfast: Peanut Butter Toast
    Lunch: PB&J Sandwiches, Cut Veggies, Orange Wedges
    Snack: Birthday Cake (my daughter had her birthday party)
    Dinner: Pork Loin (from the freezer), Tossed Salad, Fruit Salad

Monday, May 19th:
   Breakfast; Peanut Butter Toast
   Lunch: Leftovers
   Snack: Yogurt
   Dinner: Pork Stir Fry (with the leftover pork), Rice, Fruit Salad

Tuesday, May 20th:
   Breakfast: Oatmeal Muffins
   Lunch: Leftovers
   Snack: Birthday Cake
   Dinner:  Salad with Chickpeas, Feta Cheese and Strawberries

Wednesday, May 21st:
   Breakfast: Oatmeal with Almonds and Craisins
   Lunch: Leftovers
   Snack: Rhubarb Crisp (our Rhubarb is finally in)
   Dinner: Minestrone Soup in the Crockpot, Biscuits, Apple Slices

Thursday, May 22nd:
    Breakfast: Pancakes with Bananas
    Lunch: Leftovers
    Snack: Rhubarb Crisp
    Dinner:  Leftover Soup, Tossed Salad, Fruit

Friday, May 23rd:
    Breakfast:  Oatmeal with Walnuts and Bananas
    Lunch: Leftovers
    Snack: Rhubarb Crisp
    Dinner: Out for All

Saturday, May 24th:
   Breakfast: Waffles with Oranges
   Lunch: At a Graduation Party
   Snack: At a different Graduation Party
   Dinner: Pizza and Tossed Salad

Menu Plan Monday - Week of May 4, 2014

Wow - I really didn't mean to take that much time away from blogging!!!  Silly me - every time I think things will calm down, they just get more exciting!

We got our placement for Internship and John officially gains the title Vicar June 2.  We're pretty excited since we got our first choice (how often does that happen?!) and we have an idea of what our life will look like for the next 15 months.  The children get to attend VBS there free this summer so we're hoping they make a few friends to ease the transition.  Internship starts in 4 fast approaching weeks and many of our plans for stockpiling, and being totally "prepared" financially have fallen by the wayside due to other more urgent matters (but that's another post).  I'll be posting sporadically until June and then hopefully back to my regular (ha!) posting schedule.

We haven't done much grocery shopping partly due to eating the freezers down so we can fill them back up with our summer produce.  We have both the mostly veggie CSA we had last year and a new all fruit CSA we're trying this summer.  From our grocery budget that will leave us $18 each week to fill up at the grocery store or farmer's market and give us the money for both of these next year too. If the fruit one is a flop, we'll add that portion back in or try something else.  We didn't think we had much in the freezers but cleaning them out always surprises me - how do we end up with that much food when it looks like there's not much there?  If that isn't a "problem" to be blessed with, I don't know what is!

My cousin belongs to a food co-op that gives her very large quantities of food each month. She came to visit bringing us 5 loaves of artisan bread, a gallon of ranch salad dressing, a box of toffee candy bars (20 bars), 10 lbs of red potatoes, 8 ears of corn, and 5lbs of apples.  My parents are also visiting and they brought grapefruit and oranges (fresh where they live!) and bought ice cream and fresh cod for meals too.  Yes, we're totally spoiled!

Anyway, so with a few purchases of milk, crackers, some seasonal fruit and an occasional avocado, we've been eating very well!

  Breakfast: Toast and Peanut Butter
  Lunch: Pancakes with Strawberries, Oranges and Almonds
  Snack: Ice Cream
  Dinner: Cabbage Rolls, Italian Bread, Tossed Salad, Fruit

Monday, May 5:
   Breakfast: Toast and Peanut Butter
   Lunch: Leftovers
   Snack: Yogurt
   Dinner: Fish Tacos, Corn on the Cb, Fruit

Tuesday, May 6:
   Breakfast: Oatmeal
   Lunch: Leftovers
   Snack: Yogurt
   Dinner: Ham and Cheese Sandwiches, Carrots Sticks and Tomatoes, and Apple Slices
   Dessert (after dance recital with friends): Ice Cream

Wednesday, May 7, Buddy and Missy's 9th Birthday
   Breakfast: Waffles with Strawberries and Almonds
   Lunch: Leftovers
   Snack: Yogurt
   Dinner: Homemade Pizza and Bread sticks
   Birthday Dessert: Birthday Cake

Thursday, May 8:
   Breakfast: Oatmeal
   Lunch: Leftovers
   Snack: Leftover cake
   Dinner: Chinese Takeout courtesy of my parents

Friday, May 9:
   Breakfast: Oatmeal Muffins and Bananas
   Lunch: Leftovers
   Snack: Yogurt
   Dinner:  Salmon, Tossed Salad, Fruit

Saturday, May 10:
   Breakfast: Buttermilk Coffee Cake, Strawberries and Bananas
   Lunch: Tuna wrap sandwiches, Cut Veggies
   Snack: Yogurt
   Dinner: Breakfast Tacos (breakfast for dinner)
